Here at Racks we serve our own wonderful mulled cider, cooked on site. But if you want to really beat the cold weather and fill your own home with the aroma of apples and spice leave you feeling warm and cosy then here is a recipe for an amazing mulled cider.

2L of good quality cider. This should be cloudy with a good body, with a rich and sweet taste.

2 apples

6 cloves

1 cinnamon stick

1/4 grated nutmeg

5 all spice berries

Juice and zest of 1 orange

Juice of 2 clementines

splash of rum

apple slices. Other fruits can be added as you desire

Pour the cider into pan on a low heat letting it warm though for a few minutes.

Add all the spices and juices and turn the heat up.

When it starts to boil turn the heat down and allow to simmer for 5-8 minutes.

Taste it and add sugar if necessary, you don’t want it too sweet.

Ladle into glasses or mugs and add the slices of apple. Best served warm.
